General Tso's Chicken

So, I was in Kroger one day a week or so ago and I stumbled across this little seasoning packet....



...for General Tso's Chicken.  The back of the envelope calls for the chicken to be breaded in flour, tossed with sugar and fried (in general tso's tradition) however, I don't fry anything, ever...and that whole recipe would definitely NOT help with the weight loss goals!

I do love me some Chinese food though...and general tso's is by far my favorite.  So, as I was reading the ingredients and instructions, I thought to myself...I can totally make this one weight loss friendly!  And so I did...!

Here's what I used...
Ingredients:
1 packet general tso's seasoning mix
3/4 cup water
3 tbsp low or reduced sodium soy sauce
1/4 cup splenda (the packet says to use sugar)
1/2 cup atkins baking mix (the packet says to use flour)
1lb chicken tenders, cut into pieces
1/4-1/2 tsp cayenne pepper (optional--I like spicy)


Put the atkins mix into a plastic baggy and shake the chicken until well coated.  Spray a baking sheet with non-stick spray and bake the chicken on at 350 for 20 minutes, flipping half way thru.

This is the chicken before being baked! 

In the meantime, mix the water, soy sauce, splenda and cayenne pepper (if you so choose) in a sauce pan.  It'll look a little something like this...

so the color may be a bit different if you add the pepper in on this step...just FYI~!

Mix the sauce mixture well and heat on low to medium heat, stirring occasionally until it boils.  Be sure you keep an eye on it and keep stirring it, or it will stick--it thickens and becomes sticky as it cooks. 

When the sauce is ready, it'll look a little something like this...

When the chicken is done, toss it into the sauce pan and stir until all of the chicken is coated well.  The final product will come out looking something like this here...



I made my plate...

...and ate every bite!!!  So the verdict...?  It's good ya'll~!! Spicy (to my liking) and sticky just like it's fresh from a Chinese chef!  Give it a a try!
